Ingredients:

🥚 1 large egg (room temperature)
🌾 2 tbsp plain flour / all-purpose flour
🥛 1 tbsp milk
🍚 1.5 tbsp sugar
🍦 1/2 tsp vanilla extract
🍋 3 - 4 drops of lemon juice / vinegar (optional, for egg stabilization)

  • Spatula (preferably flat)

Instructions:

  1. Separate the egg white and yolk into two different bowls.
  2. Beat the egg white using an electric mixer until soft peaks form. Gradually add the sugar as you continue beating until stiff peaks are achieved.
  3. To the egg yolk, add milk and vanilla extract. Stir until well combined.
  4. Sift the flour into the egg yolk mixture and mix until smooth.
  5. Gently fold the whipped egg white (meringue) into the yolk mixture using a flat spatula, being careful not to deflate the batter.
  6. Pre-heat the frying pan over a 4/9 heat level for 1 minute and lightly grease with oil or butter.
  7. For two pancakes, scoop two-thirds of the batter into the pan to form two pancakes. For a big pancake, pour all the batter into a pastry ring lined with Teflon paper.
  8. For small pancakes: sprinkle 2 tsp of water around the pancakes, cover with a lid, and cook for 2 minutes. Then, add the remaining batter on top of the pancakes, reduce the heat to 3/9, add 1 tsp water, cover, and cook for another 5 minutes. Flip carefully and cook for an additional 5 minutes, then allow to rest in the pan for 1 minute.
  9. For a big pancake: cook at a 3/9 heat level for 7 minutes, then flip and cook for an additional 6 minutes.
  10. Serve immediately with your favorite toppings such as fresh fruit, butter, powdered sugar, or syrup.
