Instructions:
1. Begin by making the simple syrup. Combine 200 grams of sugar and 100 grams of water in a small saucepan. Gently heat the mixture on the stovetop, stirring until the sugar completely dissolves. Set the syrup aside to cool, then decant it for later use.
2. Brew a strong pour-over coffee using 75 grams of coffee to 1 liter of water, aiming for a 1.5% end strength brew. This equates to a more concentrated coffee to counter any dilution from the soda-making process and to ensure a robust coffee flavor. Cool the brewed coffee.
3. Pull a double shot of espresso, aiming for a 19-gram input to a 40-gram output. This should yield an espresso with approximately 9.5% strength.
4. Paper filter the espresso to remove any suspended particles and crema, which can interfere with the carbonation process. Pour the fresh espresso through a V60 paper filter into a clean container. Allow it to drip until you have a clear coffee liquid.
5. Dilute the filtered espresso with approximately 180 grams of tasty, clean mineral water to match the 1.5% strength of the pour-over.
6. Sweeten the combined coffee with the simple syrup, starting with a conservative amount and adjusting to taste. Keep in mind that the soda should be on the sweeter side.
7. Add a subtle hint of a complementary flavor such as vanilla extract or a twist of citrus zest to enhance and warm up the coffee flavor without overshadowing it.
8. Mix the coffee, syrup, and additional flavors thoroughly, then chill the mixture until it’s ready for carbonation.
